Healthy Eton Mess
Thursday, April 14, 2016So here is the recipe I will be using this year to curb those craving whist not being too naughty.
Ingredients
Meringues (makes 12)
2 egg whites
1/4 tsp cream of tartar
Pinch of salt
100g sugar substitube
1/2 tsp vanilla extract
Preheat oven to 150'c or gas mark 2

150g Fat Free Yogurt
Strawberries dicedPreheat oven to 150'c or gas mark 2
Spritz a baking sheet with cal controlled oil.
Whisk egg whites, cream of tartar and salt in a bowl.
Add sweetner a spoon at a time - whisk until stiff and glossy.
Gently fold in vanilla.
Spoon splodges onto the baking sheet.
Cook for 18-20mins.

Once cooled break up 2 meringues and add in 150g of fat free yogurt and the strawberries and mix.
It didn't last long it was very yummy. would also be lovely with blueberries too.
